We ordered takeout from @nori.atx, a delicious vegan Japanese restaurant here in Austin. Here’s what we had and what I thought (hint - we love it 😋).

We’ve also been to the restaurant and 100% recommend for a nice dinner. They also opened a patio recently, which looks so fun. I love that we have some great vegan options for a nice dinner in Austin 🎉

It’s national tofu day! I absolutely love tofu and I wanted to share my favorite way to make it. It’s super simple and quick.

Crispy Air-fried Tofu
1 block of extra firm tofu
2 tsp garlic salt or to taste
1 tsp paprika
2 tsp nutritional yeast
1/2 tbsp olive oil

Steps
Press the tofu for at least one hour
Cube the tofu to your desired size
Add the cubed tofu to a bowl and toss with the oil and seasonings
Toss into the air fryer for 16 minutes at 385F

Play around with the amount of the seasonings as well as the seasonings themselves (eg you can add onion powder or anything spicy). Also play around with the time and/or temperature if you want it more or less crispy.

It’s perfect for so many dishes. Serve with salad, potatoes, veggies, pasta, fried rice, or anything you can think of. Buen provecho!

Pepper Pollo 🌱

I love this quick recipe that the whole family likes. Let me know if you make it! Buen provecho 😋

Ingredients

·   1 medium onion, finely sliced
·   2 green bell peppers, finely sliced
·   1 8 oz bag of soy curls
·   3 Tbsp olive oil

Soy curls marinade ingredients
·   2 tbsp olive oil
·   ¼ cup low sodium soy sauce
·   1 tsp garlic salt or to taste
·   2 tsp liquid smoke

Sauce Ingredients
·   ¼ cup low sodium sauce
·   2 tbsp seasoned rice vinegar
·   2 tsp sesame oil
·   2 tbsp maple syrup
·   ½ cup water

Steps

·  Soak soy curls in water for at least 30 minutes
·   Drain and wring out with a towel
·   In a large bowl, mix the soy curls with oil, soy sauce, garlic salt, and liquid smoke
·   While the soy curls are marinating, heat 2 tbsp in a large pan
·   Add the sliced onion and bell peppers on med/high, and sauté for about 10 minutes, until the vegetables are soft
·   While the veggies are sautéing, mix the sauce ingredients
·   Remove veggies and heat another tbsp of olive oil in the pan
·   Add the soy curls and sauté on med/high for about 5 minutes
·   Mix in the veggies and the sauce with the soy curls
·   Cover and leave on med/high for about 6 minutes, then leave uncovered on med for about 3 minutes
·   Serve atop white rice and top with sesame seeds, and a splash of toasted sesame oil

Hi friends! Hola! 👋🏼

It’s been such a long time, I thought I’d reintroduce myself ☺️

I’m Giselle, a boricua living in Austin, TX for the past 8 years. I have been vegan for 5 years and it’s been such a great journey. I started this page to share my vegan versions of favorite Puerto Rican recipes. I learned how to cook with my mom and my abuela, and I love it. So it was important to me to keep eating the foods I learned from them.

Since the last time I was in this space, we’ve lived through a global pandemic, I’ve changed jobs twice and, most importantly, I had a daughter! 💕 My baby girl is now one, and I love being a mom.

Going forward, I want to keep sharing recipes with y’all, and also vegan lifestyle content. Thank you so much for still being here. Please say hello in the comments and let me know what you’d like to see in this space in the future. 👇🏼

This was my FAVORITE meal in Paris 🤩❤️ (Baja para español) While we ate lots of delicious food, our meal at Potager du Marais was the one I was most looking forward to and it did not disappoint. I love mushroom bourguignon, so this seitan bourguignon was calling my name. I had it with potatoes au gratin. I absolutely loved it. Somehow the seitan was buttery soft, you could cut it with a fork. And the potatoes were amazing 🤤 I did add a bit of salt and pepper, but that’s just me being salty 😂 Juance had the veggie lasagna, which was also great. And to top it off, we had the apricot creme brûlée. This restaurant is VERY small and popular, so reservations are a must. You can call or email for reservations (I suggest you email in either French or English). To be honest, I had read mixed reviews and almost skipped it, but Juance convinced me otherwise, and I’m so glad.

Esta fue mi comida FAVORITA de París. A pesar de haber comido muchas comidas ricas, esta cena en Potager du Marais era la más que estaba esperando, y no decepcionó. Me fascina el bourguignon de setas, así que este bourguignon de seitán me estaba llamando. Lo acompañé con papas au gratin (gratinadas). Me encantó. De alguna manera el seitán estaba tan suave que se podía cortar con un tenedor. Y las papas estaban deliciosas. Juance comió la lasaña de vegetales que también estaba muy rica. Y de postre pedimos un creme brûlée de albaricoque. Este restaurante es BIEN pequeño, así que las reservaciones son necesarias. Puedes hacerlas llamando o enviando un email (recomiendo que lo redactes en inglés o francés). Para ser sincera, había leído críticas mixtas y por poco lo paso por alto, pero Juance le convenció y estoy contenta de haberle hecho caso jaja

We are finally back in Austin, so I will keep posting about our vegan meals in Paris. We started out our day in Le Marais eating lunch after going to the Atelier de Lumières show at VG Patisserie. It’s a small vegan café with savory items and lots of pastries. We had the pizza, the veggie stuffed croissant and the quiche. 🍕🥐 It was very very good. And we finished off with some strawberry cake, flan, and a latte. I really loved the desserts. 🍰 Don’t overlook this patisserie if you’re in Le Marais! ..........................................
Ya estamos de vuelta en Austin así que seguiré compartiendo nuestras comidas veganas en París. Comenzamos nuestro día en Le Marais almorzando en VG Patisserie, un café que vende comida y postres. Comimos la pizza, el croissant relleno de vegetales, y el quiche. 🍕🥐 Estaba muy rico. Y terminamos con un bizcocho (tarta/pastel) de fresas, flan, y un latte 🍰 Me encantaron los postres. No dejen pasar esta patisserie si están en Le Marais! 🤗
